Throughout the episode Simon and Marcy, you see what appears to be pink gum all over the place. At the end of the episode we find out that this gum is alive and even sentient. It helps out Simon in little ways here and there, where it can. It serves as a latter (even though I'm sure it was probably just there already, it's still a happy coincidence that it was there for him) when he wants to investigate the food truck and had no other way of getting up there. It is also within earshot (or whatever it uses for hearing) when Simon says that he needs chicken soup. Then it tries to catch him when he jumps from that raised area. Even though he would have been zombie bait if he had stayed there, he was able to escape from it and in doing so it lessened how far he would have fallen, thus helping him. Then when he's about to run into a dead end, it helps him again (happy coincidence or not) by doing what it can in trapping some of the zombie-mutants. After all is quiet and Simon regains his self, he notices that the gum has now appeared in the ally a few feet away, and has brought him, not only a can of chicken soup, but a swiss army knife with the can opener and spoon sticking out of it. Now, even if all the other times were coincidences and that it just happened to be there, why would this possible first candy person go through the trouble of finding such things in a city where everything is gone (so it would have been pretty hard to find) just for this stranger that walked in, and is clearly happy to do so? Maybe it's because he isn't a stranger. If you've read my Betty/PB Theory, you know that I believe that Betty is Princess Bubblegum. (if you haven't, please go check it out so you may understand this theory better. [link] )
I theorize that this sentient gum is either a prototype candy person that was made by Betty to watch over Simon while she herself can stay safe, or is Betty herself, in a raw form after having become Bubblegum, if something had gone wrong. (although I'm more partial to the first, you can side with whichever one makes more sense to you)

I think the pink goo IS Princess Bubblegum and she evolved over time. (My theory.)

It's an interesting theory but I always thought it was the first generation of Candy People and not Bubblegum; I actually believe maybe it could have been Betty or another scientist responsible for this mutation in candy such as it slowly evolves over time and a surviving person tries to create someone in their image as a preservative of their life.

I think Ice King/Simon's obsession for Bubblegum mainly goes with the idea she is a lot like Betty in personality and that it is conscience kind of thing :3

The MAJOR problem with that goop being Princess Bubblegum is the fact that PB isn't the first candy person. There is AT LEAST 2 generations of Candy Kingdom Royalty that came before PB (Great Uncle Gumbald as mentioned in "Susan Strong" remember). That mentioned combined with the various photos scattered around PB's castle and even Cotton Candy Princess from when Billy was young makes it very clear that no matter how much older PB actually is compared to her biological age of 18, she isn't Mushroom war old.

Says who though? If you read my other theory and the added note in it especially, I've already thought of that. Who's to say that she didn't create relatives for herself or if they were candy people that she felt close enough to that she called them her relatives. She could have even made them to take over rule of the Candy Kingdom for a while so that she could have a break. And we know that candy people besides her very well can age. We have no idea how long PB has been alive for and the entire situation will remain up to speculation until it's been officially revealed by the show or Pen Ward. So really, either of us could be right. I just feel that thinking of the show like this is allot more fun and interesting, and adds even more levels to its deep plot, whether I'm right or wrong in the end. :)

But why would she create relatives meant to be older than her? If she can create successful ruling replacements molded to be fake family (even as a little girl), why are Lemongrab and Goliad such failures (and on top of that, so completely different from her and her relatives)? Why was she a little girl at one point? That bubblegum mass around Simon and Marcy should be more than enough to make an 18 year old Bubblegum. The whole idea is VERY flawed and riddled with holes.

I mean yeah, you could say it is possible. But the foundation is VERY shaky. It's like the theory that the whole show is just coma induced dream.
